Leftovers Can Rock

We don't do leftovers often. It drives my mother crazy but true.

This time I made them work with success.

Two days ago we had a rice dish made in the rice cooker - rice, chicken broth, dried cherries, turmeric, ginger, garlic, and cashews. It was good but we had loads leftover.

I sauteed some chicken seasoned with 5 spice powder, salt, pepper, and ginger. Set that aside.


Fried an egg in that skillet and then chopped it up into little pieces, added the chicken back and the rice mixture - along with chopped scallions and some edamame.


Moistened it with a little chicken broth and soy sauce for a great fried rice dish.



I guess I should put more thought into using our leftovers.
