What's for Dinner?

I think I might have found my mojo. I know I've been vacant here lately and when I post it hasn't been about food, but I have been cooking - in between hospital visits with Mom (yes she is still there) and work, work and work.

Chicken Piccata w/Parmesan Salad Baskets



This chicken is your basic piccata - lemon, white wine, capers and quickly sauteed thin chicken, lightly breaded. Fast, easy and scrumptious.

The salad is a mixed green combo with prosciutto ham fried to a crisp and a tart lemon vinaigrette. What made it special was the Parmesan baskets. So simple but fun and elegant.



Just take a small skillet or crepe pan. Heat to medium-high. Sprinkle grated Parmesan cheese (the real stuff, not the powdered green box - ick) until you almost can't see through it. It will start to melt and as soon as it just barely turns brown on the bottom (peek), pick it up with a spatula, fork or combo thereof and place over an upside down ramekin to cool.
