Sometimes the best things we make are spur of moment, off the cuff creations.
This is a perfect example of that.
I had made some red velvet cake for some cake ball truffles. I didn't need the entire cake so I baked three 9" cakes very, very thin.
After they cooled, I cut out circles and made a trifle.

The filling is whipping cream, melted white chocolate, cream cheese and powdered sugar. The toppings are toasted almond slivers and grated dark chocolate. I also drizzled just a little bit of raspberry syrup over the cake.

This was very, very good - if I don't say so myself.
