Drowning In Veggies

The CSA is in full swing. I had to use up the rest of last week's before I picked up tonight's.

So last night we had....Veggie & Pasta Toss with Eggplant Bruschetta!


Totally made this one up.

I cut up zucchini, squash, green peppers, and eggplant. Sauteed the veggies in butter with salt and pepper. Boiled some egg noodles.

Chopped up some tomatoes, onion, garlic, fresh parsley and fresh basil - mixed it with some EVOO and balasamic vinegar. Set aside.

Sliced some eggplant long-ways and slathered it with EVOO, salt and pepper. Grilled on hot grilled for 2-3 minutes each side.

Mix pasta with veggies and add some mozzarella cheese and fresh basil.

Top eggplant with crumbled goat cheese and tomato mixture.

Voila!

This is what I picked up tonight.


So for dinner I grilled sweet corn and made a salad of tomatoes, cucumbers, green peppers and onions.

I wasn't joking. We are drowning in veggies.

Enjoy this good stuff while you can. Winter will be here before you know it and you'll be wishing you had it.

I've actually started freezing some. I've made one batch and plans for three more of freezer cole slaw. Plus I've frozen blanched kale and shredded zucchini.

Oh god, I've become my mother.
