What's on the menu this week? Soup!
Tonight it was Tomato Saffron Cream Soup with our new favorite, Pimento Crostinis.
This was a great and easy recipe. The only thing it lacked was a "roasted" flavor. Maybe because it looks like my Roasted Red Pepper Soup I was yearning for some familiarity in flavor. The tomatoes came through along with the leeks, garlic and of course, saffron. I may try this again with roasted tomatoes.
Don't get me wrong, it tasted good. I just like to see how I can make things better.
