A new restaurant has popped up in Louisville close to where I work called The Blind Pig. Their tag line is "swine dining". Obviously they specialize in all things pork - most especially bacon. They even have butter pecan bacon brittle ice cream on their menu. Unfortunately when co-workers and I went for lunch yesterday, the ice cream machine has apparently yet to arrive...sigh.
Cool concept. Cool name. Good food.
