Not Your Mama's

In my attempt to add more vegetables to our diet, I revisited an old recipe my mother and probably your mother used to make - carrot salad.



Instead of raisins, I used dried cranberries and instead of canned crushed pineapple I used fresh chopped granny smith apples.



The dressing was a mixture of lemon juice, mayonnaise and sour cream -- and I didn't use a lot of dressing so it wasn't creamy, just wet. Don't forget to season your carrots with salt and pepper after shredding.



It was a hit! Try it.
