I'm on a roll

After my adventures into Bacon Jam, my mind went down a dark path. What other ingredients could I turn into a savory condiment of love?

Shallot Jam!

Sautee four large shallots in olive oil until translucent over med-low. Add 1/3 c. brown sugar and 3/4 c. balsamic vinegar. Simmer until thick and lovely.

I topped toasted crostinis with this and added goat cheese and candied pecans. Yes, it was that good.
