Menu Planning Continues

I don't know why. Usually when I decide to have a party, the menu is pretty much the first thing I do and it rarely changes unless it is an ingredient finding problem.

However, here we are four days and counting away from P-Day and I'm still unsure on the entree. The rest of the menu, I think, is pretty set in stone.

The candidates?

Hickory Smoked Maple Glazed Pork Tenderloin
Goat Cheese & Fig Stuffed Chicken Breasts
Bourbon Pecan Chicken
Flank Steak w/Chimichurri Sauce

...and I am still scouring cookbooks.

I want something great - not average, really great. But (there is always a butt) I don't want to spend loads of time in the kitchen after the party starts. I want to enjoy it too.

Any suggestions?

I am always inspired by the barefoot contessa, she keeps her dishes pretty simple - but they sure do impress. Record a couple of episodes, you never know what you'll find.

I vote for pork. I think the pig is one of God's greatest creations.

Bacon, ham, pork chops, more bacon ...

You could simply serve bacon and I would be pleased!

The Lobster & Corn Chowder sounds delicious as well.

Creme brulee for dessert?

I have decided on pork (wonder why?). Now just to decide what to stuff it with...
