
I love roasted chicken. It is so simple but so lovely.
I love the smell of it while it is roasting, filling the house with the aroma of rosemary and garlic. And I love the taste of its moist, juicy meat and crispy skin.
On the episode of Top Chef where Fabio made Lidia her "last supper" I could totally relate. Some may want caviar or lobster, but I want something that fills my stomach and my soul. Roasted chicken is it.

So I made my own, complete with roasted potatoes and carrots.
Now I just need a nap.

ever since I saw that episode i've been hankering for roast chicken.
I have never made a whole roast chicken. I need a receipe. I think I have one calling my name in the freezer too! Your photos look so good!
recipe? Hmmm...here is what I did.
Thaw chicken. Cut off wing tips (they just burn anyway).
Stuff chicken with fresh rosemary and sage, and lemon cut into quarters. Sprinkle some salt and pepper inside.
Tie up the chicken legs to keep the cavity coveren.
Rub with olive oil, salt and pepper.
Take aluminum foil and squeeze into a long thick bunch - like a snake.
Curve it into a "u" shape and place in deep jelly roll type pan.
Place chicken breast side up. You can cut up some potatoes and carrots, toss in olive oil, salt and pepper and place around the chicken.
Bake at 450 for 15 minutes, then reduce to 350 for about 40-45 minutes until chicken is done.
