This month's Royal Foodie Joust is here again. The ingredients were:
fennel - in any form
dairy
parsley
After a much thought, I decided on Fennel Risotto w/marscapone cheese.

This was very good and very rich. Basically your traditional risotto starting with sauteed diced fennel and sweet onions with chicken broth. But at the end instead of a hit of Parmesan cheese - I added butter, half & half and 2 tablespoons of marscapone cheese and of course chopped fresh Italian parsley.
So creamy and delicious.
Even if I don't win, we loved it. And the best part? There was plenty of leftovers for risotto cakes later this week. Yum!

Beautiful! Good Luck! My first thoughts were of fresh fennel,sauteed, put in an alfredo sauce over angel hair pasta, with fresh parsley, chopped for garnish on top...
Ooh yum. I just ate and that makes me hungry.
I have never had risotto before! That looks so tasty I may have to give it a go!
