Drowning in Zucchini and Squash


Anyone have any "different" recipes for these lovely produce gems?

We have done zucchini bread, batter fried squash, stir-fry squash, squash shish-ka-bobs, pasta salad, sauteed zucchini - I am starting to sound like Forest Gump.

And yes I have even froze some shredded zucchini for bread and stirfry this winter.

I once took a first place ribbon in the State BB-Q Cook-off with a Zucchini "boat".. Hollow out small zucchini(with both ends cut off) to look like a dug out canoe, grill it a little, sprayed with a little olive oil, then fill with a red pasta sauce with ground meat in it. Sprinkle top with Parmesan and reheat until warm..

We like to toss slices in fav salad dressing then grill it with slices of red onion, eggplant, halved plum tomatoes and (chop smaller if you like after grilling) then toss with olive oil & balsamic vinegar (or more fav salad dressing) for a nice summer side dish.
