Easy Weeknight Dinner

I found it on Key Ingredient, which by the way is a great place to look for recipes. You also find great food blogs along the way.

Pasta with Quick Creamy Sauce

When a recipe starts with goat cheese, Parmesan cheese and fresh parsley in a food processor - it can only be fantastic.


While your pasta is boiling, you saute onions, garlic, pine nuts and fresh tomatoes in olive oil. Then add them to your food processor and spin until you have the creaminess desired. If you need to thin it, use some of your pasta water.

Yum!!!


I like using the rigatoni noodles too because they grab all the gooey sauce and tiny little chunks of pine nuts.

This was also great for leftover lunches - always a plus in my book.

Oh yum that looks good - but I am the only pasta eater in the house - oh well more for me :)
