American Pie

Other than just eating them fresh, I actually made a pie with some of the blackberries I was so graciously given.

I got this recipe for a Peach Blackberry Pie from Epicurious and I have to say it is the most beautiful pie I have ever made, or seen for that matter.

Don't you agree?


An interesting tip this recipe gives for keeping the bottom crust from becoming soggy with the fruit juice is to mix an egg white with water for a wash and brush it all over the bottom crust before filling.

And it worked.

It calls for little sugar which is good for us and the end result is a little tart, but that is what I wanted. That way when served with vanilla ice cream, they compliment one another.

Also, I had no crytallized ginger in the house (I used it all for the scones) so I added a little ground ginger. It wasn't as strong, but still worked.

Can't you just smell it?

But would you know that my hubby wasn't a fan and didn't want anymore after that first piece? What a waste.
