Last Night's Dinner

What would you do with leftover focaccia bread?

Caprese Paninis, of course.

Fresh tomatoes, fresh basil and smoked mozzarella cheese. Voila!



To accompany it - Roasted Red Pepper Soup. I typically make my own but I also keep Pacific Organic Roasted Red Pepper Soup on hand for last minute meals, like tonight. It is really yummy.


After warming the soup, I usually put about a teaspoon of cream and balsamic vinegar on top to add a sweet kick.

OHHHH YEAHHH! I love this dinner! Tomato soup and bread with melty cheese is really the best combination ever!

Brilliant. I read the first line and first thought of all these complicated Italian bread soup dishes... and then saw your panninis! There ain't no culinary debacle in this world that melted cheese can't solve.
