We aren't much on leftovers in our house. The occasional chili, spaghetti or lasagna is about as far as we go. It drives my mother crazy when she is here, but why bother packaging it up for the refrigerator when we all know it will get tossed in about a week.
Last night we had a get together with some of my colleagues at our home as a farewell party for one is who leaving us. It went well. We played Wii, pool, ate and drank. What more could you ask for?
I had some food leftover but I am impressed that most of this I will be able to "recycle".
First off, veggies and dip - I'll eat those all weekend, no problem.
Secondly, a black bean pineapple salsa - yum! This will be served with some grilled chicken today and quite possibly made into a chicken chili tomorrow.
Lastly, I made a cappuccino fondue. It was awesome (recipe below). I had banana bread, brownies, and marshmallows for dipping.
It worked good for those who don't like coffee, they still had dessert.
I did have some of the fondue left over and it reheats well so I can munch on that with the leftover dippers, but...........what a great ice cream topping!
The hubby doesn't like coffee so I guess I get it all to myself.
Darn.
Cappuccino Fondue:
12 oz. Guittard cappuccino chips (I found mind at World Market)
1/4 c. milk
1/2 c. heavy cream
1/4 c. liquor (I used Kahlua, you could use cream de cocoa, Bailey's, whatever flavor you want to enhance)
Melt in bowl over steaming water. Serve in fondue pot or I just used a warmed ceramic bowl and it stayed "dippable" all evening.

Yummy! When ever I have leftovers, I immediately freeze them in single portions and then I grab them for work lunches.
I too would forget about them in the fridge or just not feel like having it again so soon - but a week or too later out of the freezer it is such a treat to have lasagna or casserole etc instead of a plain ole salad or sandwich.
I often take left overs for lunch when it is something I like. But I know us - we wouldn't eat it a month later anymore than a week later.
