Let Them Eat Cake

I went all out for the birthday party cakes this weekend. I didn't think one would feed everyone as it said 12 servings (wrong). So I made two, two very different ones.


First cake was a White on White (white buttermilk cake with amaretto buttercream frosting). I can't describe how beautiful and rich this cake was. Unfortunately I failed to take it out of the refrigerator before the party and the icing was hard when served - I hate that.


It was an interesting icing to put together.







You brought sugar and water to soft ball stage while beating lots of eggs for like five minutes. Then you slowly stream in the syrup mixture into the beating eggs (no it did not cook the eggs). Then you continue mixing for seven more minutes to cool the mixture.

Then you add half sticks of butter beating at least 30 seconds after each one for a total of 6 sticks. You read correctly. 6 sticks of butter!

I was really worried about the consistency as it just seemed to be melting the butter, until the last couple additions and then it was perfect fluffy icing.

Good cake. Rich cake. Probably wouldn't make again because it was soooo rich.
