Door Knock Dinners

Everyone knows we are moving. Old news.

So I am trying to glean the pantry, frig and freezer over the next two weeks to make the food transfer easier.

Some ingredients are easy to use, i.e. rice, pasta, cheese, etc.

Others have me a little stumped. So I need your help. Either separate or together - what do I do with:
  • frozen mango
  • 1/2 bag of coconut
  • frozen spinach
  • vidalia onions
  • canned pears
  • huge jar of baby dill pickles
  • 1/2 bottle of bbq sauce

All offers will be seriously considered.

1. Mango margarita.

2. Toast the coconut. Cook some rice, replacing 1/2 the water with coconut milk. Toss in the toasted coconut and chopped cilantro. Serve with something teriyake-esque.

3. The only thing I use frozen spinach for is spinach lasagna, or chicken-spinach pie, and you don't have time for that! Pitch it.

4. Vidalias? Put a pat of butter on 'em and pop `em in the microwave for 5 minutes. Serve with every meal. How else does anyone eat them?

5. Pears & Pickles: Put 'em in the kitchen at work. People will eat anything at work.

6. BBQ sauce: trash it.

Mango margaritas? Why didn't I think of that?

Love the idea for the rice/coconut and I've never heard of your vidalia prep - will definitely be trying that.
